Slow cooked, shredded beef for tacos, seasoned with garlic and ginger and served with a lime sour cream sauce.

For the beef:
1 (3 lb.) beef chuck roast
1 small onion, sliced
1/2 cup packed brown sugar
1/3 cup low sodium soy sauce
5-6 cloves garlic, minced
2 tablespoons fresh grated ginger
3 tablespoons rice wine vinegar
1 tablespoon sesame oil
1 teaspoon red pepper flakes
1/2 teaspoon salt
Small corn or flour tortillas, for serving
For the lime sour cream:
1 cup sour cream
Zest and juice of one lime
Pinch of salt
Optional toppings:
Sriracha sauce
Lime wedges
Chopped fresh cilantro
Sesame seeds
