Slow Cooker Mexican Chicken Soup

Zippy chicken soup with a Mexican flair is an easy end of winter crockpot dinner.

3 chicken breasts
2 15 ounce cans of black beans, drained and rinsed
3 cups of frozen corn
1 red bell pepper, diced
1 green bell pepper, diced
1 6 ounce can of tomato paste
the juice of 2 limes
1 red onion, diced
1 tbs cumin
1-2 tbs chili powder*
4 cloves of garlic pressed
2 chili peppers in adobo sauce
64 ounces of chicken stock or enough to fully cover the chicken and veggies
salt and pepper to taste
For garnish
Additional lime wedges
Jalapenos
Cilantro
Corn tortillas, cut into strips
Shredded cheddar cheese
