This an awesome, family favorite recipe. For this one you get to pull out your trusty crock pot. Ahhhh….don’t you love your crock pot!? This recipe is perfect for those days when you don’t have a ton of time to spend preparing a meal. This pineapple mandarin chicken doesn’t have a lot of extra prep involved, you just throw those ingredients in and off you go. 3-4 lbs boneless, skinless chicken breast
1 (20.5 oz) bottle Mandarin Sauce
1 (18 oz) jar pineapple preserves
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small yellow onion, chopped
salt and pepper (optional)
chopped green onions (optional)
4 cups prepared brown rice
