Slow Cooker Spicy Peanut Beef

A nice delicious meal that isn’t a roast (hey roast is great in the slow cooker – but there are SO MANY more things that your slow cooker can do!). I like the idea of getting an Asian flair out of the slow cooker – spicing things up a bit. You can definitely heat this meal up even more by adding more Sriracha (in case you’ve never used it – Sriracha is found usually in the Asian food aisle of your grocery store. It’s a spicy Asian ketchup almost). You could tone it down by adding a bit less.

1 1/2 pounds of stew meat
2 Tbsp lime juice
3/4 C peanut butter (you could use 1/2 C to get a less peanutty flavor)
1/4 C sriracha
2 Tbsp soy sauce
2 Tbsp sugar
2 Tbsp lime juice

Spray slow cooker with non-stick cooking spray
Place stew meat into slow cooker
Mix together remaining ingredients and pour over meat
Cook on low for 8 hours
