Slow Cooker Tex-Mex Peppers

A great summertime slow cooker recipe! These peppers scream to be paired with guacamole and a margarita. Any extra filling is delicious on top of tortilla chips.

1/2 onion, minced
5 garlic cloves, minced
1-2 T chili powder
1 T vegetable oil
4 bell peppers (red, orange or yellow)
1 slice white bread, torn
1/4 cup whole milk
12-ounces 85% lean ground beef
1 cup frozen corn
1 1/4 cups Monterey Jack cheese, shredded
1 tsp canned chipotle chile in adobo sauce, minced
salt and pepper
