Smoked Sausage Potato Bake

Creamy mashed potatoes with cheese and sausage.

6 medium russet potatoes, peeled and cubed
1/2 cup milk
3 tablespoon unsalted butter, divided
1 cup light sour cream
1 cup shredded cheddar cheese
14 ounces smoked turkey sausage
1 cup monterey jack cheese
2 tablespoons dry bread crumbs

Preheat oven to 350º F. Spray a 2 quart baking dish with cooking spray and set aside. In a medium pot add potatoes and cover with cold water. Bring potatoes and water to a boil and boil for 15-20 minutes...
