Smoky Acorn Squash Soup

A heart warming and savory soup made from acorn squash and a variety of spices. The smoky essence of chipotle peppers permeates throughout the dish.

1 large acorn squash, halved and seeds scooped out
2 tablespoons olive oil
1/4 cup onion
2 cloves garlic, pressed or minced
1 cup canned pumpkin purée
2 teaspoon salt plus more, to taste
1 1/2 teaspoons chipotle paste (or more to taste)
1/4 teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon ground coriander
1/4 teaspoon turmeric
3 cups vegetable broth or water plus more to thin it out
