This is my favorite dessert, its very delicious that I have to exercise a strong self control not to lick my plate before the guest

8eggs
400gms castor sugar divided
3 vanilla pods divided
2litres milk and 750ml extra
2Tsp vanilla essence
separate egg yorks from whites.in a machinebeat egg white until firm and thick,fold in sugar small portion at atime.in a large pan,boil 2litres of milk letting it simmer slowly, with a soup spoon scoop egg white mixture and let it slowly in the simmering milk, be careful that it may not separate, cook for about a minute and a half on one side, turn it on the other side to cook for a minute and half or until its firm, repeat the process with all egg white mixture placing it on a clean kitchen towel. seave the milk removing all egg white particles add extra milk ,beat the egg York in a machine adding a little sugar at a time. add vanilla essence. put the milk back in the pan over low heat let it warm , slowly pour the egg York mixture ,whisking the warm milk faster to avoid curdling. Take a wooden spoon and continue whisking the milk egg York mixture until think enough to coat the wooden spoon. Pour it in a serving bowl topping it with the egg white mixture
