South Texas Coleslaw

Forget the mayo, this coleslaw is full of flavor and less calories than the traditional!

¼ c. white vinegar
¼ c. extra virgin olive oil
2 tbsp. sugar
3 tbsp. lime juice
1 tsp. salt
½ tsp. coriander, ground
¼ tsp. cumin, ground
¼ tsp. red pepper flakes
¼ tsp. black pepper
2 c. red cabbage, thinly sliced
2 c. white cabbage, thinly sliced
½ c. carrot, shredded
1medium jalapeno (with seeds), finely chopped
½ red bell pepper, chopped
½ yellow bell pepper, chopped
Whisk together first 9 ingredients in a large bowl. Add in remaining ingredients and toss to coat. Chill 30 minutes prior to serving.
