Southwest Turkey and Black Bean Stuffed Peppers

These hearty and healthy Southwest stuffed peppers are full of ground turkey, black beans, and kale and then topped with queso fresco, fresh cilantro, and lime.

4 large bell peppers
1 Tbsp. vegetable oil
6 cloves garlic
1 white onion
1 jalapeno remove seeds for less heat

3 packed cups chopped kale
1 can black beans drained and rinsed
2 tsp. smoked paprika
2 tsp. adobo seasoning
1 tsp. cumin
1/2 tsp. Mexican oregano
2 cups red enchilada sauce
