Southwestern Chicken Cornbread Casserole

A yummy summer casserole full of BBQ flavors and shredded chicken!

Filling
1lb (450g) boneless, skinless chicken breast
1 teaspoon oil
1 onion, chopped
1 cup (160g) sweet corn
1 large bell pepper (or 5 mini peppers), cubed
1¼ cups smooth tomato sauce
¾ cups of your favorite barbecue sauce
Salt, pepper

Cornbread Topping
1 cup flour
? cup corn flour
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1 large egg
2 tablespoons melted butter
1 cup pureed sweet corn
1 cup sour cream
