SOUTHWESTERN STEAK SALAD WITH A CHIPOTLE VINAIGRETTE

A juicy steak salad, loaded with crunchy fried onions, crisp veggies, and a smokey chipotle vinaigrette.

For Marinade:
1 lb. Flank Steak (or thin cut beef sirloin)
1 Tablespoon Brown Sugar
1 Tablespoon Garlic Salt
1 Tablespoon Dijon Mustard
¼ Cup Olive Oil
2 Tablespoons Soy Sauce
1 Tablespoon Worcestershire Sauce
1 Tablespoon White Wine Vinegar
For Steak Salad:
Baby Spring Mix
? Cup Shredded Carrots
? Cup Corn (White or Yellow)
? Cup Jicama, diced
5-6 Cherry Tomatoes, sliced in half
2 oz. Feta Cheese, cut into cubes (crumbled feta would work nicely too)
Fried Onions for topping (I used French's)
For Smokey Chipotle Vinaigrette:
2 Tablespoons Chipotle Peppers in adobo sauce (include sauce in measurements)
1 Clove Garlic
2 Tablespoons White Vinegar
¼ Cup Olive Oil
1 Tablespoon Worcestershire Sauce
1 Handful of Cilantro
1 Teaspoon Dijon Mustard
1 Teaspoon Sugar
Salt and Pepper to taste
To Marinate Steak: Combine flank steak and all ingredients for the marinade in a large freezer bag and marinate in the fridge for at least 4 hours or over night. When steak has finished marinating grill on...
