Buttery, flaky, delicious spanakopita that couldn\\\'t be easier to make at home! These pastries are filled with spinach, fresh herbs, onion, feta, and parmesan cheeses and wrapped in phyllo dough so tender it melts in your mouth!

1 package phyllo dough, thawed
1-10 oz. package fresh spinach
1/2 cup shallots or white onion, roughly chopped
1/2 cup parsley
8 oz. feta cheese
8 oz. (1 package) cream cheese
1/4 cup parmesan cheese
1/4 cup goat cheese
2 eggs
salt and pepper to taste
1 1/2 - 2 sticks butter, melted
