Spanish Potato Omelette (Tortilla)

The famous Spanish Omelette (Tortilla) requires only few simple ingredients to make: eggs, potatoes, and onion, but the end result is fantastic!

1 lb potatoes, peeled and thinly sliced
1ΒΌ cups olive oil + 2 tablespoons, for frying
1 medium onion, thinly sliced
salt and pepper, to taste
