SPICY CHICKEN ARABIC KABSA

Kabsa is a popular Arabic rice dish originated from Saudi Arabia.. And it is available in all GCC countries , sometimes the name may differ. here is a spicy chicken kabsa recipe

Chicken-2 full chickens with skin( each cut to 4 pcs )
Kabsa rice / Basmati Rice- 2.5 cups
Water-5.5 cups( hot water )
Saudi Kabsa masala-6 big spoon + 3 spoon
Red chilly powder-2 spoon
Oil-4 spoon
Ghee-1 spoon
Onion-2 or 3 ( sliced )
Tomatoes-4 ( chopped )
Cilantro leaves-a big handful ( finely chopped )
Bay leaves-2
Whole Garam masala-as shown in the image(cloves, cardamom , cinnamon, cumin seeds, fennel seeds, pepper )
Crushed Ginger & Garlic -2 spoon
Green chilly-4 ( cut to half )
Big chillies-4
Lemon juice-2 spoon
Dried lemon-3 ( 2 whole & 1 crushed )
first soak the washed rice in water ( not hot or warm water) for at least 1/2 an hour or so.. This will make the rice cook easily.. 2)make a marinade with lemon juice, 3 spoon Kabsa powder, chilly powder...
