Spicy Chipotle Chicken Bowl

Spicy Chipotle Chicken Bowl is a quick and delicious meal to add to your meal prep for the week. Eat them for lunches or have them for dinners. Either way they won’t disappoint.

1 tbs olive oil (not extra virgin)
1 lb chicken chopped
1 can low sodium black beans rinse and drained
1 tomato chopped
3 handfuls power greens, kale, or spinach
2 cups brown rice uncooked
2.5 cups water
Juice of one lime
Chopped fresh cilantro
1 tsp cumin
1 tsp chili powder
1 tsp chipotle powder
1 tsp onion powder
1 tsp garlic
½ tsp cayenne (if you like the spice)
Salt and pepper to taste
Optional:
Sour cream
Shredded cheese
