1/2 tsp. fennel seed
1/2 tsp. dried oregano
1/2 tsp. crushed red pepper flakes

2 lbs. sweet potatoes (about 4), peeled and cut into wedges
2 Tblsp. olive oil
Spicy Mayonnaise Dip:
1 1/4 cup mayonnaise
2 Tblsp. lemon juice
2 Tblsp. minced fresh cilantro
2 garlic cloves, minced
1 tsp. ground mustard
1/4 tsp. cayenne pepper
1/8 tsp. salt
1/2 tsp. fennel seed
1/2 tsp. dried oregano
1/2 tsp. crushed red pepper flakes
1/2 tsp. salt

In a spice grinder, combine the coriander, fennel, oregano, salt, and pepper flakes; grind into a fine powder.
In a bowl, combine the potatoes and oil. Toss to coat.
