Spinach and Ricotta Lasagna Rolls

Vegetarian goodness all rolled up!

5-6 lasagna noodles (cooked)
2 cups chopped fresh spinach
1 1/2 cup low fat ricotta cheese
1/4 Medium yellow onion (chopped small)
1 Large egg
1/4 cup grated parmesan cheese
1 Large clove garlic (crushed)
2 tablespoons italian seasoning
salt and pepper to taste
4 white mushrooms (chopped)
1-3 cup favorite pasta sauce
Preheat the oven to 350 degrees. Cook the lasagna noodles according to package directions, rinse and set aside. In a large bowl, combine the remaining ingredients except the mushrooms and pasta sauce....
