Spinach Chicken Salad

This cool and healthy salad is a summer staple at our house!

2 C cooked, cubed chicken
2 C grape halves
1 package of spinach leaves
2 C sliced celery
1 package of corkscrew pasta, cooked and drained
1/2 cucumber, sliced
3 green onions, sliced

Dressing:
1/2 C vegetable oil
1/4 C sugar
2 Tbs white wine vinegar
1 tsp salt
1/2 tsp dried minced onion
1 tsp lemon juice
2 Tbs minced fresh parsle
Toss all salad ingredients in a large bowl. Cover and refrigerate. Combine all dressing ingredients in a jar; mix well and refrigerate. Just before serving, pour dressing over salad and toss.

4 c cooked white rice
2 T chopped fresh parsley
1 T fresh lemon juice

Tuna Casserole:
8 ounces wide egg noodles
5 tablespoons butter (unsalted)
5 tablespoons flour
2 1/2 cups milk (2%)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 teaspoon dried parsley
1 cup shredded sharp cheddar
1 cup shredded white cheddar
2 pouches tuna in water
1 cup frozen baby peas
Crumb Topping:
1/2 cup panko breadcrumbs
2 tablespoons butter melted
