A light, healthy Spinach Orzo salad that is versatile enough for any occasion

3 tablespoons olive oil
2 garlic cloves, thinly sliced
Juice and zest of 1 lemon
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 ounces baby spinach leaves
1 pound cooked orzo
1 cup pitted Kalamata olives, sliced
4 ounces chopped feta cheese
1/4 cup thinly sliced red onion
