Ingredients
3 cups chopped spinach (palak)
1 tbsp roughly chopped garlic (lehsun)
1 tsp oil
1/2 cup finely chopped onions
1 tsp cornflour dissolved in 1/2 cup low-fat milk
salt and freshly ground pepper (kalimirch) to taste
Method Heat the oil in a non-stick pan, add the onions and garlic and sauté on a medium flame for 1 to 2 minutes. Add the spinach and cook on a medium flame for 2 minutes. Add 1 cup of cold water and purée the mixture in a blender to a coarse texture. Pour the purée back to the pan, add the cornflour-milk mixture, salt and pepper and bring to a boil. Serve hot with toasted whole wheat bread
