S's Thyme and Garlic Roast Beef

Garlic is inserted into this tasty roast beef before braising with thyme and vegetables. A perfect #SundaySupper

2 pounds chuck roast
6 cloves garlic, peeled
1 teaspoon extra virgin olive oil
2 tablespoons fresh thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 cups potatoes, peeled and cubed
2 cups baby carrots, chopped
1 whole onion, peeled and quartered
4 cups fat free beef broth
