Strawberry Lemonade Muffins with Strawberry Curd

An amazing combination of flavors when strawberries and lemons combine. The strawberry curd is the perfect addition to these muffins.

Muffins:
2 1/2 c. self rising flour
1 1/4 c. sugar, divided
1 {8 oz.} container sour cream
1/2 c. butter, melted
1 Tbsp. lemon zest
1/4 c. fresh lemon juice
2 large eggs, lightly beaten
1 1/2 c. dice fresh strawberries

Strawberry Curd:
4 c. {1 pound} sliced fresh strawberries
1/2 c. sugar
2 Tbsp. cornstarch
1/4 c. fresh lime juice
3 large eggs
2 egg yolks
3 Tbsp. butter
