Strawberry Parfait

Crust
1 cup sprouted buckwheat

4 medjool dates pitted

1 tsp pure vanilla

1/2 -1 tablespoon raw carob powder

1 tablespoon raw coconut sugar (optional)

(you can dehydrate the sprouted buckwheat for an hour or so to get the moisture out before blending. This will make the crust less wet)


Filling

1 lb strawberries

1 ripe banana

3 soft pitted dates

1 tsp fresh lemon juice
Blend all ingredients together to form your crust. Press in bottom of glass or dish. Blend together until dates are pureed with the strawberries and bananas. Layer in a pretty glass and enjoy.
