Strawberry Vanilla Cheesecake Parfait with Homemade Granola

Strawberry and vanilla yogurt flavored with cheesecake pudding layered in a dish with fresh fruit and an easy homemade granola.

Granola
2 cups old-fashioned oats- dry
? cup very ripe banana (about 1 small one)
? cup creamy peanut butter
¼ tsp. cinnamon (more if you want a more distinct flavor)
1 tbsp. very hot water
½ tsp. vanilla
2 tbsp. brown sugar, lightly packed
1 cup “mix ins:” I did ? cup craisins, ? cup chopped pecans, and ? cup chocolate chips
Optional: pinch of salt

1 (6 ounce) low-fat strawberry yogurt (or sub another flavor)
1 (6 ounce) low-fat vanilla yogurt (or sub another flavor)
Fresh fruit, chopped up (I used strawberries)
Optional: 2 tbsp. sugar-free cheesecake pudding mix, dry
