The next time I make these I would probably throw them under the broiler for just a minute to crisp them up a bit.

4 pork loin rib chops
1/4 medium onion chopped
2 stalks celery chopped
1/4 cup mushrooms chopped
1/4 cup butter
1/4 cup dried apricots chopped
1/4 teaspoon sage
1/4 teaspoon black pepper
20 ritz crackers
1/3 cup orange marmalade
1 teaspoon worcestershire sauce
1/4 medium onion chopped
2 stalks celery chopped
1/4 cup mushrooms chopped
1/4 cup butter
1/4 cup dried apricots chopped
1/4 teaspoon sage
1/4 teaspoon black pepper
20 ritz crackers
1/3 cup orange marmalade
1 teaspoon worcestershire sauce
Preheat oven to 375F.
Trim fat from chops.
Slice each chop by horizontally cutting from fat side almost to the other side, do not cut completely through.
