Stuffed Green Pepper Rings

This is a main dish and vegetable all in one with a delicious sauce!

1 egg
3/4 cup quick cooking oats
1 cup shredded mozzarella cheese
1t salt
1/2t pepper
1lb ground beef
1/2c diced onion
3 green bell peppers
1/2c packed brown sugar
2/3c ketchup
1 1/2t prepared yellow mustard
-Preheat oven to 350 degrees. -Wash peppers and slice horozontally into 4 rings each. Remove seeds and ribs and set aside on a sheet pan sprayed with cooking spray. -Beat egg and milk together. Add oats, onion,cheese, salt and pepper. Mix well. -Add ground beef and combine well. Divide into 12 equal portions and stuff into pepper rings. -Combine sugar, ketchup and mustard and spoon over each stuffed pepper. My husband is not a ketchup fan so I leave the delicious sauce off of his-he doesn\\\'t know what he is missing! -Bake for 35-40 minutes.
