Sví?ková na Smetan? with Bread Dumplings

This classic Czech dish is a delicious roust topped with a sauce made from root vegetables and sour cream.. I simplified cooking by preparing it in a slow cooker.

Sví?ková na Smetan?:
2-3 pounds beef roast
1 slice of bacon, sliced into thin strips
2 tablespoons butter, softened
1 medium onion, chopped
2 medium carrots, chopped
2 medium parsnips, chopped
1/2 small celery root, diced (I didn't find this at the local supermarket, but the nearby Sprouts Farmers Market carried it)
2 bay leaves
1/2 teaspoon allspice
1 teaspoon thyme
1 tablespoon dried parsley or 2 tablespoons fresh parsley
1 cup / 8 fluid ounces red wine vinegar
1/2 teaspoon sugar
The juice of 1 lemon
1/2 cup sour cream
Bread Dumplings:
4 cups of flour (500 g)
1 package of yeast (I used 1 tablesoon)
2 eggs
A pinch of salt
1/4 teaspoon of sugar
1 1/4 cup of warm milk
2 stale hot dog buns, cubed
