Sweet Almond Mexican Horchata

Horchata is one of my favorite drinks, and everyone that I have introduced it to loves it as well. It is a tasty drink that originates from Mexico and is typically made from rice, although some versions also are made from coconut. This version is enhanced with chopped almonds and delicious vanilla. It takes a little bit of time to make, but trust me, it is worth the wait!

3/4 Cup of uncooked white rice
1 Can of Evaporated Milk
1 Stick of Cinnamon
1.5 Tablespoons of Vanilla extract
1/4 cup of chopped almonds
1 Cup of sugar
1 Cup of Milk
1 Liter of Water
1 Can of Evaporated Milk
1 Stick of Cinnamon
1.5 Tablespoons of Vanilla extract

In a medium sized bowl, empty the uncooked rice, the vanilla, the almonds, the cinnamon stick and one cup of water. Let it rest at room temperature overnight, or at least for 5 hours.
