Sweet and Smokey Salmon Salad

This is an amazingly delicious and healthy recipe! The spice rub from the salmon mixes with the sweet citrus dressing on the salad and is a great combination. And the leftover salmon makes great salmon patties for another meal.

1 1/2-2 lb. salmon filet
1 Tbsp. kosher salt
2 Tbsp. chili powder
2 Tbsp. cumin
zest of 1 lime
2 Tbsp. brown sugar
2 Tbsp lime juice
1 Tbsp. honey
1/4 tsp. cumin
2 tsp. avocado oil (olive or canola work fine too)
4 cups spring mix salad greens
1 Tbsp. kosher salt
2 Tbsp. chili powder
2 Tbsp. cumin
zest of 1 lime
2 Tbsp. brown sugar
2 Tbsp lime juice
1 Tbsp. honey
1/4 tsp. cumin
2 tsp. avocado oil (olive or canola work fine too)
4 cups spring mix salad greens
Mix the salt, chili powder, cumin, lime zest and brown sugar in a bowl. Rub on salmon filet and let sit for 20-30 minutes at room temp. Heat oven to broil or heat outdoor grill. Cut salmon into portion sized pieces and drizzle with a little olive oil. Place on broiling pan under broiler or place on grill. Broil or grill for 15-20 minutes or until fish flakes and is done in the center. While the fish cooks, mix the lime juice, honey, 1/4 tsp cumin and avocado oil in a bowl. Toss with salad greens. Divide salad greens amongst 2 plates. Place one salmon portion over greens and flake with fork.
