Sweet and Sour Tofu Stirfry

3/4 cup Apricot Fruit Spread (I found a sugar-free version that tastes great!)

2 Tablespoons vinegar

1 1/2 teaspoons garlic salt

1 1/2 teaspoons ground ginger

1 1/2 teaspoons soy sauce

1/4 teaspoon crushed red pepper flakes

2 medium zucchini, sliced

1 14-ounce package of tofu, drained and pressed

1/2 pound small mushrooms, sliced

1/2 teaspoon salt
