Sweet and Spicy Tilapia

Fish is one of my favorite foods but sometimes I fall into a rut and prepare it the same way everytime. I tried out this rub and it was a hit. The rub is quite spicy so you may want to start with less chili powder and work your way up.

2 Tbsp brown sugar
2 tsp chili powder (If you don't like it really spicy try 1 tsp)
1/2 tsp chipotle pepper powder
pinch of kosher salt (1/8 tsp or so)
a few turns of fresh ground pepper
6 frozen tilapia fillets (or fresh)
Preheat oven to 425 F. Mix spices together crushing the brown sugar until all ingredients are incorporated. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Run warm water...
