Sweet Potato Chicken Enchiladas

Sweet potato and chicken filling inside flour tortillas with a creamy green chili sauce.

2 medium sweet potatoes, peeled and diced
1 1/2 cups salsa verde (green salsa)
1 cup cream
2 1/2 cups cooked, shredded chicken
2 cups frozen corn, thawed
2 cloves garlic, minced
3 tablespoons chopped fresh cilantro
1 teaspoon chili powder
1/2 teaspoon cumin
2 cups Mexican blend cheese, divided
10-12 (8-inch) flour tortillas
Optional toppings:
Fresh cilantro
Diced tomato
Diced avocado
Sour cream
