Sweet Potato Gnocchi with Sage Butter

Sweet soft potato pillows with ricotta and hint of nutmeg, served in a sage butter. These gnocchi are the perfect comfort food.

For the gnocchi
1 pound sweet potatoes, cleaned
6 ounces of ricotta, drained in a sieve for 2 hours
1 1/2 cups all-purpose flour
Freshly grated nutmeg * see note
1 cup parmesan cheese, grated
1/4 teaspoon salt
5 turns of freshly ground black pepper

For the sage butter

2 tablespoons unsalted butter
10 fresh sage leaves
Your favorite tomato sauce
