Russet and sweet potatoes in a cheesy, creamy sauce.

4 cups thinly sliced sweet potatoes (about 2 large potatoes)
4 cups thinly sliced russet potatoes (about 2 large potatoes)
1/2 cup thinly slice onion
2 cups heavy cream, divided
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 cups (8 oz.) shredded Gruyere cheese
1/2 cup shredded Parmesan cheese
