Sweet Potato Protein Pancakes - no butter, oil, or flour!

1 large sweet potato (about a cup mashed)
1 cup liquid egg whites
1 scoop vanilla protein powder (I used whey)
1/4 cup flaxseed
1/2 tsp baking powder
cinnamon to taste
1/2 tsp vanilla
1. Combine all ingredients in blender and blend till smooth, about 30 seconds to a minute. 2. Cook pancakes on medium heat, flipping after 30 seconds to a minute.
