A tender, chewy, doughy little bit of goodness made from a gorgeous sweet dough, topped with pearl sugar bits. Perfect for breakfast, or with tea or coffee.

SWEET DOUGH
? cup milk
5 tablespoons sugar
1¾ teaspoons active dry yeast (one ¼-ounce envelope)
2 large eggs, room temperature
2¾ cups flour
1 teaspoon salt
½ cup butter, cut into 1-inch pieces, plus ½ tablespoon melted
PRETZELS
1 large egg white
2 tablespoons warm water
6 tablespoons pearl sugar or turbinado sugar
? cup milk
5 tablespoons sugar
1¾ teaspoons active dry yeast (one ¼-ounce envelope)

2¾ cups flour
1 teaspoon salt
½ cup butter, cut into 1-inch pieces, plus ½ tablespoon melted
PRETZELS
1 large egg white
2 tablespoons warm water
6 tablespoons pearl sugar or turbinado sugar
Heat milk in a small sauce pan over medium heat (or in a microwave) to 110°-115° F.
Transfer to a 2-cup measuring cup, stir in 1 tablespoon of the sugar and whisk in the yeast.
