4 tilapia fillets
1 cup carrots, thinly sliced
1/2 cup red bell pepper, thinly sliced
1 small onion, diced

For the Sweet and Sour Sauce:
1 tbsp cornstarch
2 tbsp water
2/3 cup vinegar
1/2 cup brown sugar
2 tbsp ketchup
