Sweet Sticky Rice with Mango

2 cups cooked sticky rice
16 oz can coconut milk
1 cup sugar
1 tsp vanilla
1/4 tsp salt
1 tbsp sesame seeds
1 mango, peeled, pitted, and sliced
In a saucepan, heat the coconut milk until it is almost a clear liquid. Add sugar, vanilla, and salt. Heat 2-3 minutes, stirring constantly, until sugar is dissolved. In a small saute pan, lightly toast the sesame seeds until golden brown, then set aside. Place cooked rice in a medium bowl, and pour the coconut milk mixture on top. Mix well. Put 1/2 cup of this sweetened rice on a plate, and form into a round, circular shape. Do the same with the rest of the rice on 3 more plates. Place several slices of mango on top of the rice on each plate, then sprinkle the sesame seeds on top.
