Szechuan Prawn (Shrimp) and Sweet Potato Poppers

Fresh, light and zingy little mouthfuls of peppery prawns mixed with sweet potato and Asian flavours.

300g prawn meat, shelled & deveined (approx 170g prawn meat)
100g sweet potato, grated
3 tablespoons plain flour
2 teaspoons grated ginger
1 small clove garlic, crushed
2 teaspoons light soy sauce
2 teaspoons szechuan peppercorns, finely ground
¼ teaspoon salt
3 spring onions, roughly chopped
1 handful fresh coriander leaves
1 egg
2 tablespoons oil
Lettuce leaves
Mixed herbs like Thai Basil, Coriander and Vietnamese Mint
Sweet chilli sauce to serve
