Taco Lasagna in the Ninja

Taco lasagna using my Ninja

12 oven ready lasagna noodles
1 pound ground beef
1 package taco seasoning
16 oz small curd cottage cheese
2-3 cups shredded cheddar cheese
1 (24 oz) jar chunky salsa
1 can Rotel diced tomatoes with peppers

Optional toppings: sour cream, green onions, diced tomatoes, shredded lettuce.
1. Using the Ninja, brown the ground beef on stove top medium. Drain the grease, mix the taco seasoning in the ground beef and set aside. 2. Pour the can of Rotel diced tomatoes on the bottom of the Ninja so it evenly covers the bottom. 3. Start to layer: 3 or 4 lasagna noodles, then 1/3 of the cottage cheese, 1/3 of the beef mixture, 1/3 of the salsa and 1/3 of the cheese. Repeat layers until ingredients are gone. 4. Cover & cook on stove top low for about 30 minutes, or until noodles are done. Leftovers can easily be frozen. Or this can be made up ahead of time in a casserole dish & frozen to be used later.
