Moules Marinière (Mussels with Garlic and Parsley) is French fast food at its best. Deliciously ready in 20 minutes.
2 lbs fresh mussels ( cleaned )
3 Tbsp unsalted butter
3 Tbsp leek ( sliced )
2 Tbsp shallot ( sliced )
2 bay leaves
1/4 tsp kosher salt
1/2 tsp freshly ground black pepper
1 c dry white wine
3 Tbsp creme fraiche (or heavy cream)
1 Tbsp lemon juice
1 tsp lemon zest
4 Tbsp fresh parsley leaves ( minced )
French baguette ( optional )

Farro Stew with Kale & Cannellini Beans (Mediterranean) - Cooking Classy
For some strange reason I have always LOVED split pea soup!. With carrots and onions it has such a wonderful, rich flavor. It is a great comfort food that I don’t get often enough (my children are not fans because it is green). The barley adds a kind of nutty texture that I really liked. I hope you enjoy it as much as I do.
1 cup dry split green peas
½ cup medium pearl barley ( not quick-cooking barley )
2 cups ham ( small cubes )
¾ cup carrots ( chopped )
¾ cup onion ( chopped )
¾ cup celery ( chopped )
5 cups water
2 tsp. chicken bouillon
1 teaspoon garlic powder
½ tsp. salt
½ tsp. pepper
1 bay leaf

Combine the water, bouillon and spices and whisk to combine and set aside.

I adapted the original recipe to save on calories, but the flavor in this Gumbo is still fantastic. I didn't have Andouille sausage, so I subbed in Kielbasa, and it was deliciouso!

1/2 t. pepper ( divided )
3 lbs. bone-in chicken thighs ( skin removed I used boneless, skinless chicken breasts )
2 T. olive oil
1/2 c. all-purpose flour
1 large onion ( finely chopped )
3/4 c. finely chopped green pepper
3/4 cup finely chopped sweet red pepper
2 celery ribs ( finely chopped )
4 garlic cloves ( minced )
4 cups water
2 1/2 cups chicken broth ( divided )
1 1/2 lbs. fully cooked andouille sausage links ( sliced or the equivalent amount of Kielbasa )
2 T. Worcestershire sauce
2 bay leaves
Hot cooked rice
3 green onions ( chopped, for garnish optional )
1 t. salt ( divided )
1/2 t. pepper ( divided )
