While we're making Limoncello anyway…why not also try making a different "cello?" Using ruby-red grapefruit and blood oranges too? So we did!

Arugula Citrus Salad with Chia Seed Apple Cider Vinaigrette

A combination of sweet and tart fruits with peppery arugula, all topped with a chia seed apple cider vinaigrette.
Salad:
1/2 ruby red grapefruit, peeled and cut into sections
1/2 navel orange, peeled and cut into sections
1 mandarin, peeled and cut into sections
2 c arugula
Vinaigrette:
1/3 c raw apple cider vinegar
2/3 c extra-virgin olive oil
2 tsp Dijon mustard
1 Tbsp chia seeds
1 tsp honey
1/2 tsp Maldon sea salt
1/4 tsp freshly ground black pepper

This easy and delicious one-bowl Blood Orange and Almond Olive Oil Loaf Cake is quick to make, moist, and bursting with fresh citrus flavors!
3/4 cup sugar
zest of 1 blood orange
2 1/3 cups all purpose flour
4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
1/3 cup fresh blood orange juice
1 cup milk
1/3 cup olive oil
1 cup slivered almonds
Glaze:
2/3 cup confectioner's sugar
3 tbsp fresh blood orange juice
