Roast Leg of Lamb with Paleo Gravy, Gluten Free

Roast leg of lamb with paleo gravy. For a non-paleo gravy just substitute all purpose flour for the arrowroot powder.

5-6 pound boneless leg of lamb
2 tbsp olive oil
7 cloves of garlic, skinned
2-3 sprigs of rosemary
salt and pepper
1 tbsp arrowroot powder
water
Preheat your oven to 350 degrees Rub olive oil all over leg of lamb Make 7 small slits evenly around the roast with a knife and insert the cloves of garlic Sprinkle liberally with salt and pepper Tuck sprigs of rosemary under the strings on the roast Roast approx 1 hour 30 minutes or until the temperature reaches 150 degrees Remove roast from oven and remove the roast to a cutting board and let rest while making the gravy Pour pan drippings into a saute pan and place on medium heat on a stove Sprinkle in the arrowroot powder and approx 1 cup of water, stirring constantly until gravy is thick Add additional salt and pepper if needed Slice the roast and top with the gravy or serve the gravy on the side
