It's apple cider muffin season! Moist, fluffy muffins with apple cider, shredded apple, and your favorite apple pie spices, with a cinnamon streusel on top.
Muffins:
1-1/2 c apple cider
1 large egg
1/2 c granulated sugar
1/2 c brown sugar ( packed )
4 Tbsp unsalted butter ( melted )
1/2 c milk
1 tsp vanilla extract
2 c all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp allspice
1/8 tsp cardamom
1/2 tsp salt
1 apple ( peeled, cored, and shredded )
Extra melted butter for greasing muffin pan
Cinnamon Sugar Streusel:
1/3 c all-purpose flour
3 Tbsp granulated sugar
1/2 tsp cinnamon
3 Tbsp unsalted butter ( softened )
1/3 c chopped nuts ( optional )

Cooking in a solar oven is so easy and fun. My daughter came over and we whipped up some banana scones for lunch. They baked up beautifully.
