Arugula Citrus Salad with Chia Seed Apple Cider Vinaigrette

A combination of sweet and tart fruits with peppery arugula, all topped with a chia seed apple cider vinaigrette.
Salad:
1/2 ruby red grapefruit, peeled and cut into sections
1/2 navel orange, peeled and cut into sections
1 mandarin, peeled and cut into sections
2 c arugula
Vinaigrette:
1/3 c raw apple cider vinegar
2/3 c extra-virgin olive oil
2 tsp Dijon mustard
1 Tbsp chia seeds
1 tsp honey
1/2 tsp Maldon sea salt
1/4 tsp freshly ground black pepper
1/2 ruby red grapefruit, peeled and cut into sections

1/2 cup unsweetened coconut flakes
1 3/4 cups crispy brown rice cereal
3 tbsp flaxseed meal
1 tbsp chia seeds
1/2 tsp salt
4 tbsp coconut oil
1/4 cup coconut sugar
1/3 cup honey
1 cup blueberries
Greek Yogurt Glaze:
1/4 cup Greek yogurt
1 tbsp coconut oil ( melted and slightly cooled )
1 cup powdered sugar
1/2 cup unsweetened coconut flakes
1 3/4 cups crispy brown rice cereal
3 tbsp flaxseed meal
1 tbsp chia seeds
1/2 tsp salt
4 tbsp coconut oil
1/4 cup coconut sugar
1/3 cup honey
1 cup blueberries
Greek Yogurt Glaze:
1/4 cup Greek yogurt
1 tbsp coconut oil ( melted and slightly cooled )
1 cup powdered sugar
