"Go To" Shoyu Chicken

If my children had one “go to” meal that they could eat every week, it would be this one. I am not sure what it is about this chicken, but folks absolutely LOVE it. It has a salty sweetness and the ginger adds a unique savor to the dish. I hope it will become a family favorite of yours as well.

1 chicken cut up ( or you can use breasts or thigh pieces )
¾ cup soy sauce
1 large pinch pickled ginger ( found at oriental markets or fresh ginger, sliced thin )
1 cup water
½ cup sugar
8
Bring soy, water, and sugar to a boil. Add chicken and ginger and simmer until chicken is tender. 30 - 45 until done, stirring occasionally. Remove chicken and thicken sauce with 2 T. cornstarch and water....

I love cook books, magazines and everything else that deals with food. My friend Nikki has a wonderful cooking blog, Chef in Training. I often go there for a new idea or when I am looking for something different to cook outside. The other day I saw these fabulous looking burritos and knew they were destined for a dutch oven. The flavor is unbeatable and it is sure to please even your most picky eaters. I hope you enjoy these!

Creamy Clam Chowder

I love a good bowl of clam chowder on a cool evening. There is just something wonderful about the smooth, creamy goodness of clams, potatoes and cream. Add a good bread, like Cheese Bread, and you are set for a great evening.

Beef Short Ribs

was looking for something new last week as I prepared for our family get together. Looking on the Camp Chef website I saw this recipe for beef short ribs and instantly fell in love. The rich, deep flavor was outstanding and the tender ribs turned out great. My son thought the carrots were fantastic, which is a plus for vegetables. Give them a try – you will be glad you did!

6 lbs. beef short ribs ( see note )
3 T oil
1 large sweet onion ( sliced and cut in half )
5 carrots pealed and cut 1\" on the diagonal
4 cloves garlic ( minced )
16 oz. tomato sauce
1 c barbecue sauce (I love Sweet Baby Ray\'s)
¼ c brown sugar
1 c beef broth
8
This dish can either be simmered on your camp stove or done in a dutch oven using charcoal. Get your dutch oven hot, add the oil and brown your rib pieces on all sides. Remove and set aside. Add carrots,...

One Hour Ribs

Faith loves ribs. I mean she really, really likes ribs. A while back she was sitting in a hospital waiting area flipping through magazines. She happened upon a recipe for ribs that only takes a little more than an hour, which almost seems too good to be true. Most of the time you have to bake them for hours. The combination of using a brine and finishing them on the grill was really good. We tried it for the first time and found it to be a keeper.

6 Quarts Water
1 Cup Sugar
1 Cup Course Salt
1 Head Garlic
Ribs ( You can use Baby-Back or Country Style Boneless )
6
Bring water to a boil. Add salt and sugar. Add garlic, smashed and unpeeled. Add ribs and boil for 30-minutes until tender. Transfer meat to a cooling rack or cookie sheet and allow to dry for...
