The first time I made this pumpkin cheesecake recipe, there were no leftovers to take home...they ate it all! Guess I'll just have to make another one.

Crust:
10 oz graham crackers or gingersnaps
1-1/2 sticks unsalted butter ( melted )
Pumpkin Cheesecake Filling:
1 lb Philadelphia cream cheese ( softened )
3/4 c granulated sugar
16 oz pure pumpkin puree
2 large eggs
1 Tbsp flour
1-1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp vanilla extract
Whipped Cream :
1 c heavy cream
2 Tbsp granulated sugar

Orange & Ginger Sauce Recipe

A delicious orange and ginger sauce recipe for any type of cake and sweets. This sweet and tangy homemade sauce recipe is an excellent accompaniment to chocolate pie recipes too!

You can use coconut sugar or brown sugar instead of regular granulated white sugar. However, the sauce will be much darker and sweeter.

2 cups granulated sugar
6 tbsp cornstarch
1/2 tsp salt
3 cups boiling water
2 tbsp grated ginger
Zest of one medium orange

Zesty Ginger and Peanut Soup

This is a rich, creamy, and delicious soup with the influence of West African cuisine. This peanut soup recipe is a perfect light and easy summer food for a brunch or dinner.

This dish is loosely based on groundnut stew, a dish common throughout West Africa. The main ingredients in groundnut stew are chicken, peanut butter, and ginger. However, this recipe uses pureed peanuts and chicken stock instead of peanut butter and chicken meat. This recipe is a light and herbaceous soup topped with appetizing looking garnishes.

8 cups chicken stock
1 Roma tomato
2 1/2 cups peanuts
1/2 cup butter
1 bunch mint
1 tsp cumin
5 cloves garlic
2 tbsp ginger
1 spring onion
8 ounces sweet potato
4 ounces spinach
Salt and pepper to taste
  1. Pureé 2 cups peanuts, a bit of chicken stock, black pepper, garlic, 1 tbsp ginger, and cumin together.
