It has a fennel curry sauce and a fresh herb salad that pairs so well with the smoky and bright flavors of the pork tenderloin. This pork is stuffed with a flavorful chutney. Fennel is delicious and totally chutney worthy ingredient.

Pounding pork breaks down muscle fibers, tenderizes the meat, and decreases the cooking time. And because the pieces are thin, the meat can be chewed easily without any resistance. You can also tie the rolled pork with butcher's twine. The twine will secure the meat as it cooks down, leaving it in a perfect rolled shape.

2 lbs pork tenderloin
4 leeks
4 fennel bulbs
(1 cup) parsley
1 cup mint leaves
1/2 cup curry powder
1 tbsp sugar
2 cups ouzo
6 tbsp olive oil
