If you're looking for a light dish to serve at a party, this is a good one. This would also be great at a summer garden party.

The recipe as written calls for Rosemary and Thyme, but you can substitute other herbs that you like better. Parsley and dill would also be nice in this dish.

3/4 cup orange juice concentrate
1/4 cup white wine vinegar
(1 tbsp) mayonnaise
1/4 cup olive oil
1 sprig fresh thyme
1 sprig fresh rosemary
salt and pepper to taste
1 cup lobster
8 oz small shrimp
12 oz lump crabmeat
1 large grapefruit
1 mango
1 avocado
(1/2 piece) fresh pineapple
2 tomatoes
18 lettuce leaves
1 lime

  1. Chop the fresh herbs very finely.
  2. Mix the orange juice, olive oil, vinegar, water, herbs and salt and pepper together. Refrigerate until ready to use.

While we're making Limoncello anyway…why not also try making a different "cello?" Using ruby-red grapefruit and blood oranges too? So we did!

750 mL bottle of 190-proof Everclear
4-1/2 c simple syrup
12 lemons - for Limoncello ( OR )
6 blood oranges - for Arancello Rosso ( OR )

The Paloma is a tequila-based cocktail and is most commonly prepared with a grapefruit flavored soda, squirt of lime juice and tequila then served on the rocks with a lime wedge! Adding salt to the rim of the glass is an optional finishing touch. It's the perfect refreshing cocktail to relax with!
